We pick cheese you can hold — wedges, blocks and slices, in slow-rise foam or a soft filled shell depending on the piece. Every one is measured before it reaches the page, in inches and centimetres, and its main material is written on the page too, so what arrives is what you chose.

The Materials

Every piece is chosen for one thing: how slowly it comes back. Some do it with moulded slow-rise foam, others with a soft filled shell. Both hold your fingerprint for a beat instead of snapping straight back, and if you want to know which build a piece uses, just ask us — and the page tells you which is which.

The Rise

Three to six seconds, every time. Press it flat, let go, and watch the holes come back. A cold room slows it down — that is physics, not a fault.

The Measure

A wedge photographed on its own always looks bigger than it is. So every piece is measured before it goes on the page, in inches and centimetres. No guessing from a photo.
